Food at Libélula

Nourishment as Care

At Libélula, food is not an afterthought — it is part of the healing.

What we eat, how it is grown, how it is prepared, and how it is shared all matter. Our approach to food is rooted in care for the body, the land, and the wider ecosystem we are part of.

Our Food

Simple, plant‑forward, and nourishing

All meals at Libélula are plant‑based or vegetarian.

This choice reflects both our values and our experience: a plant‑forward diet best supports the kinds of retreats we hold — lighter on the body, grounding for the nervous system, and supportive of deep inner work.

Meals are:

  • seasonal and fresh

  • thoughtfully prepared

  • designed to nourish without heaviness

  • supportive of clarity, rest, and integration

Food here is simple, colourful, and made with attention.

The Garden

Growing with intention

We grow as much of our own produce as possible on the land, using organic, regenerative practices and working in rhythm with natural cycles.

While we are still in the early stages of cultivation, our intention is clear:
to become fully self‑sufficient within the first three years, growing our own vegetables, herbs, fruit, and medicinal plants.

What we cannot yet grow ourselves is sourced locally and consciously, supporting nearby farmers and seasonal availability.

The garden is a living part of Libélula — evolving, tended with care, and woven into daily life.

The Kitchen

Where food is prepared and shared

Our kitchen and dining area are open, outdoor spaces with views across the mountains and sunsets beyond.

Meals are shared communally, with:

  • long tables

  • fresh air and natural light

  • picnic seating for those who prefer to eat outdoors

  • space to slow down and enjoy being together

This is a place for conversation, quiet moments, and connection — both with each other and with the land.

Our Chefs

Creativity, care, and presence

We are supported by a talented team of creative, intentional chefs who understand food as nourishment on every level.

Each meal is prepared with:

  • love, care and presence

  • respect for ingredients

  • an understanding of the retreat rhythm

Food at Libélula is not about perfection — it’s about being fed well, consistently, and with heart.

Waste & Reciprocity

Nothing wasted, everything returned

We serve food as a buffet, allowing each guest to take what they need and enjoy — reducing unnecessary waste.

Any leftovers are:

  • shared within the team

  • offered to our animal companions

  • or returned to the land through compost

Food scraps, fallen leaves, and natural materials are transformed into rich compost, which feeds the soil and supports future harvests.

This circular approach reflects how we aim to live here — nothing extracted, everything returned.

Looking Ahead

Growing toward self‑sufficiency

Libélula is a living project.

As the gardens mature and the land continues to regenerate, our food systems will deepen and expand. Our long‑term vision is to grow all food and medicine on the land, supported by spring water, healthy soil, and reciprocal relationship with nature.

For now, we move with honesty, intention, and care — growing step by step.

What we eat becomes part of how we heal.
